Eth Restilhè, is an initiative of autarky that aims to develop the primary sector of the Val d'Aran, sowing, grazing, pruning, protecting ... in short, respecting and loving the land.
Some of the objectives are:
Carry out the production of vegetable and animal raw materials in an organic and natural way, by putting into production farms currently in disuse, mainly through the recovery of autochthonous varieties, such as the Bossóst bean, already recovered, recognized and in operation.
Marketing high-end food, generating local wealth and offering the end consumer, artisanal food.
De-seasonalize the economy of the Aran Valley, through the recovery of the primary sector.
The perception of a well-cared and active, self-sufficient land, aims to be the mark of the project, both for the visitor, who will tend to recover a vision of an active, worked and productive land, as for the inhabitant, who can take pride in not being totally dependent on it. of snow to survive.
The recovery of the agrosilvopastoral landscape of the Pyrenean areas also implies a high environmental and cultural investment, an increase in biodiversity, an increase in ecotone areas, recovery of traditional jobs and recovery of varieties adapted to the territory.
Gourmet d'Occitània, wants to be a guarantee brand, where producers, processors and local merchants are grouped, with a similar philosophy; artisan products made from raw materials produced locally.

Some considerations to buy and / or taste our products:
This place is at the same time, shop, bar, restaurant, meeting room; For this reason, the products have two different prices, one to take away, another to consume on the spot, for the wines, there is a corking fee of € 6.00 per bottle, which is added to the price marked in the cellar of the lower part of the premises.
Most of the products are self-produced in an artisanal way, or purchased from local producers; their availability depends on various factors, season, availability of raw material, etc.
The portions are important and intended to be shared, if you have questions about it, ask, we will try to help you and / or clarify any question.
The different dishes and sandwiches are designed to be tasted as they appear on the menu, for this reason we charge € 1.50 for any modification of them.
